Papaya Salad Dressing

My husband and I love Thai cuisine, especially Green Papaya Salad! We visited Thailand for our 5th year anniversary and we just felt in love with everything about Thailand from the people and their hospitality to their amazing food. We definitely plan on having a second home in Thailand when we retire. Until then we reminisce about Thailand by trying our best to make Thai food at home. Traditional Green Papaya Salad is made with cherry tomatoes, green beans and peanuts. However, I just add any fresh vegetables and nuts in the kitchen. The recipe below is enough for three average salad portions.

You can replace Thai bird chilies with other chilies like Serranos or Jalapenos if Thai chilies are hard to find. Raw sugar can also be replaced with light brown sugar as well. Just adjust the sweetness to taste.

Try to use good fish sauce if possible. I like Red Boat Fish Sauce that you can now find at Trader Joe's!
